Vineyard Management Sustainable, no herbicides. Partial grassing with mechanical working of the soil. High Environmental Value Level 3 certification
Winemaking Hand-picked grapes only in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts.
Ageing In French oak barrels for 10 months, no new barrels. Regular stirring of the lees.
Aging Potential About 6 to 7 years
Production 3 500 bottles
Food and wine pairing Serve at 13°C with the following dishes: As an aperitif with prawns or a plate of oysters. Salmon steak en papillote, Bouchot mussels meunière, Burgundy snails, Bouquet of prawns, Asparagus platter, Scallops in cream sauce, Morel omelette, Soft-boiled egg on a bed of lamb's lettuce. Carpaccio of fresh salmon with herbs, Alsatian sauerkraut or fish sauerkraut. Toast with fresh goat's cheese.

Tasting Notes

Clear golden yellow colour. A distinguished nose combining white fruit, mineral and vegetal notes and almonds. Round and full on the palate, with racy aromas invigorated by a lovely freshness. Discreet oak, long finish, a quality Burgundy. (Tasted in 2023)

Pale yellow colour. Typical nose of ripe white fruit, with woody notes and greedy pastry accents. Creamy and fleshy on the palate, developing a highly perfumed range in which the wood remains discreet. Serve with white meat (tasted in 2022).
