Vineyard Management | Sustainable culture, no herbicides. Partial grassing with mechanical working of the soil. High Environmental Value Level 3 certification. |
Winemaking | Hand-picked grapes only. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 48 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. |
Ageing | In French oak barrels for 10 months in one or 2-wine barrels. Regular stirring of the lees. |

Tasting Notes
2020
Brilliant pale gold colour. A distinguished nose combining white fruit, lime blossom and mineral notes, with vanilla oak in the background. Beautifully taut, concentrated and sapid on the palate, still rather timid in its expression. Delicious roundness, fullness, precision, a convincing modern style. (Tasted in 2022)
