Vineyard Management Sustainable, no herbicides. Partial grassing with mechanical working of the soil. High Environmental Value Level 3 certification.
Winemaking Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts.
Ageing In French oak barrels for 10 months, no new barrels. Regular stirring of the lees.
Aging Potential About 6 to 7 years
Production 2 000 bottles
Food and wine pairing Serve at 13°C with the following dishes: As an aperitif or with a morning snack with a sandwich or a plate of cold meats. With a white or black pudding with apples. With a dozen freshly opened oysters. With a dozen Burgundy snails in a cassolette. With prawns in coarse salt, meat sauerkraut or fish sauerkraut. To accompany a Morteau sausage with hot potatoes. With frisée with bacon.

Tasting Notes

Light yellow gold colour with green highlights. Attractive nose combining yellow plum, citrus fruit and hints of lime blossom. On the palate, this wine's fruity aromas are cradled in a harmonious freshness. Straightforward, with intense aromas of grapefruit, this is a quality Aligoté. (tasted in 2023)

Pale yellow colour with light green highlights. Delicate nose of flowers and white fruit. Expressive, tangy palate, with light oak to support the wine. Fine salinity on the finish. Serve with grilled fish (tasted in 2022).

Golden yellow colour with brilliant highlights. Attractive nose of white fruit, with hints of fresh butter and vanilla. A round, seductive attack on the palate, delicately woody and reminiscent of toasted brioche. Fresh and tangy finish. Serve with oysters (tasted in 2021).

Pale gold colour with sparkling highlights. An engaging, typical nose, with accents of lime, wild flowers and a hint of herbs. A frank, full-bodied, generous Aligoté, with a lovely acidic feel. The fruit is crisp and present, with a very invigorating finish (tasted in 2020).
